THE WORLD'S LARGEST HOTEL ROOFTOP VEGETABLE GARDEN
The Wellington Hotel expands its horizons with an incredible rooftop urban vegetable garden, the largest of its kind in the world.
After traveling to cities including Paris and New York, our President, Manuel Moratiel, noted the importance of urban gardens within haute cuisine – and hastened to export this idea here to Madrid.
Implementing a rooftop vegetable garden on the hotel required a great deal of effort; access to the roof from the street is not easy, and the garden had to be carefully planned so as to ensure that the roof could support its weight. This process, along with the selection of seeds, lasted several months.
The result was worth it: 14 plots of organic farming - including red chard, tomatoes, borage, and peas. The garden showcases 4200 units and 35 varieties of green plants, free of fungicides and pesticides, and occupying 300 square meters of space. Its compost is completely organic, and the views from the garden over the roofs of the Barrio de Salamanca are nothing short of magnificent.
